This time again a nice spicy recipe for a delicious zucchini soup.
We start with a knob of butter in the pan, over medium heat. Then cut 3 red onions and put them in the pan with a lot of salt so that the onions caramelize and do not burn. Then you cut 3 cloves of garlic and put them in the pan and let it fry for another 5 minutes. As you can see, I also cut a habanero pepper in it, but if you don't like that, you leave it out.
In the meantime I added some spices such as a teaspoon of thyme and half a teaspoon of turmeric powder. I also cut the zucchini into small cubes and aimed it in the pan, fry for about another 10 minutes so that all the flavors come loose.
These purple marbles are my home-grown potatoes 'Highlander Burgundy Red', nice name for a nice potato. I cut these into cubes and hoppa in the pan together with 2 tablespoons of vegetable stock and 1 1/2 liters of water.
here everything is in the pan before water is added, bake for 1 minute for the taste.
Now everything is really in the pan, let it cook for another 15 minutes on medium heat and then brew a smooth soup with the hand blender.
