palm cabbage stew-sweet potato

What a long title for a recipe that is so good that it is finished sooner than you can say the title! So to speak.

What do you need?

Ingredients

For a nice hearty stew I also need a few potatoes because only sweet potatoes are a bit of a weak bite.

So for 4 people;

500 g of crumbly potatoes
1 kg of sweet potatoes with orange flesh
2 bags of Unox Kleintjes Rookworst Gelders à 200 g or 1 vegetarian smoked sausage
2½ tbsp olive oil
800 g of cooked palm cabbage (cavalo nero) or kale
1 tsp ground cumin
2 tsp ground coriander
¼ t cayenne pepper

Preparation
Peel the potatoes and cut them into pieces.

Preparation
Boil both types of potatoes in so much water that they are just underneath, with salt to taste if necessary, in about 20 minutes.

Heat the small smoked sausages according to the method of preparation on the packaging. OR 1 VEGETARIAN SMOKE SAUSAGE

Heat the olive oil in a wok and stir fry the palm cabbage until it is bright green in color and al dente. Add the cumin, coriander, cayenne pepper and freshly ground pepper and salt to taste.

Serve the stew of cabbage with sweet potato with the small smoked sausages. Tasty with Amsterdam onions and small sweet and sour gherkins.

To brag
Drain the potatoes but collect the cooking liquid. Stamp or mash the potatoes coarsely and scoop them through the palm cabbage. Add a little bit of the collected cooking water as desired.
