atjar courgette


You probably recognize it, at the moment you hardly know where to leave courgettes. But I have the solution! Make Atjar.


This is my own customized recipe.

Take 2 large courgettes (which is not that difficult, because if you forget them one day, you have so much zucchini and these are ideal for this recipe). If there are seeds in the zucchini, you can scoop them out with a spoon.

3 carrots, outside grated clean.

1 red onion.

1/2 pepper, yellow, green or red (does not matter).

6 cloves of garlic (yes, I love it)

1 hot pepper without seed lists.

700 ml vinegar of good quality (no cleaning vinegar).

300 grams of sugar

salt and pepper and a teaspoon of turmeric.

a tablespoon of mustard.



# Cut all vegetables into small cubes or use a grater with grater. Add salt and pepper and a teaspoon of turmeric powder.

#Place the vinegar with sugar and mustard in a large pan and let it cook, when cooking, add all the vegetables and let it simmer for 2 minutes.

# Meanwhile you clean 5 pots with hot water and soda, then for 5 minutes in a hot oven of 100 * c they are well disinfected.

#Fill the pots with a slotted spoon and funnel, press the vegetables in a pot with the convex side of a spoon. Then fill with the vinegar mixture from the pan.

This Atjar zucchini tastes delicious with oriental dishes and can keep you long. A pot that has been opened will remain in the fridge for a long time.
