The sweet potato comes from South America, around 1600 it was brought to China, Malaysia and the Indonesian Archipelago by the Spaniards, where it became an important foodstuff.
As you can see, the harvest can be quite disappointing. In the greenhouse I left them until the middle of December, when the leaves were withered and I could harvest easily.
Take a pan,
2 red onions
3 cloves of garlic
500 gr sweet potato
a can of coconut milk
1 liter of vegetable stock
a sprig of parsley
3 tablespoons of olive oil
pepper and salt
So take a pan,
It is allowed on a moderate fire with the 3 tablespoons of olive oil in it,
cut the onions fine and press the garlic,
let it simmer for a minute
peel the potatoes and cut them blocks,
Let this on a moderate heat delicious roast for 3 minutes,
then pour in the stock (1 liter)
let this cook for 15 minutes,
After 15 minutes you check if the sweet potatoes are cooked, if so ....
puree the soup with a hand blender,
after this you add the can of coconut milk and
squeeze the lime above the pan!
season with pepper and salt
and garnish it a sprig of parsley !!
Tasty tip !!
